Heretic Brewing Company
Microbrewery
in Fairfield,
California,
United States 🇺🇸
Associated Venue: Heretic Brewing Company
Established in 2011
We started by sharing a building with another brewery in 2011, but we always brewed our beer ourselves. Within the first six months we realized there wasn’t enough space for two breweries in one building, so we began the search for a new place. By 2013, we had built a new, modern brewery in the wonderful city of Fairfield, California and moved all our operations there, including our new distillery.

On tap at Bailey's, pours black with a small brown head. Aroma brings out notes of lactose and dry cocoa. Flavour is very dry and lifeless, with dry bitter cocoa powder and a little lactose. Not a convincing attempt at the style. Meh.

Grabbed a can of this in Korea and then promptly forgot about it till I was checking out of my hotel room. I popped it open and drank it down before leaving, glad I did. Nice fruity and malt profile. Candied citrus and a big caramel note linger throughout. Medium bitterness in the finish. Full bodied. Very good brew.

On tap at the Taphouse. Good warmer after a wet ride. Pours flat, but still waters run deep. Dark brown/ruby body, no head. Sour aroma, but flavor adds heaps of side notes; wood, plums, berries. Finishes bitter and dry. Nice!

Bottle from Firma Bier, dated 07.27.15, large sample. Dark color, short frothy head. Arom of roasted malts, quite some hazelnut, bit cacao, dark chocolate. Fairly dry in taste, nutty, cacao bitterness, bit citrussy fruit. I was hoping a bit more creamy choc and hazelnut, but its more dry. Ok, but not awesome. Maybe expecting too much for a top50 in style.

Pours deep mahogany into a shaker. Tan head with medium retention recedes to nothing. Caramel and citrus aromas. Soft with dark caramel and resin front to back. Lasting nutty earth finish.

Tap at DC Hama. Very light wheat nose with some light lemon and crackery malts. Body is very light with slightly watery mouthfeel. Very refreshing and easily drinkable by the gallon. Nice light tartness on the palate that keeps you coming back for more. Very simple beer, but solid for the style. Very enjoyable. --- Beer merged from original tick of Tartuffe on 29 Feb 2016 at 18:14 - Score: 7

Keg at Beercraft. Pours clear red with a light, filmy white head. The nose has lots of fresh, juicy and tart berries, hibiscus, lemon. Light sweet flavor with moderate acidity, more fresh and tangy berries, raspberry, hibiscus. Light bodied with average, spritzy carbonation. Cleansing and refreshing to close, with mild cherry, some salty bite, hibiscus, lemony acidity. Great stuff overall. Really nicely balanced. Clean and tart but not biting. Very impressed with this one.
