Description
We focus our attention on brewing rustic, unfiltered, aromatic beers that are approachable and unique. We pull from our home brewing background to build beers that pay homage to tradition, but break new ground in American brewing techniques and flavors by blurring the line between beer and wine. We are brewers of big ideas in very small batches.

Tap. Pours clear orange, medium off white head, good lacing. Aroma is dusty, field grass, coriander, hint of malt. Flavor is light sweet, light plus bitter. Medium body. Quite enjoyable.

16 oz can. Aroma is bready, peppery, herbal. Pours hazy pale golden with a two finger fluffy off-white head with great retention. Taste has a nice herbal bitterness backed by unobtrusive bready malt sweetness. Crisp, clean, crushable. Kind of damn near perfect Pilsner.

4 oz. draft pour as part of a flight at Glendale Tap. Cloudy yellow, nice head, excellent retention and lacing. Aroma is subtle citrus, vanilla. Taste is strong vanilla, lighter bubblegum, orange, mildly dank, Fruit Loops. Smooth, silky texture, soft carbonation, finish as taste. Leans a little too sweet and the vanilla is interesting, though don't necessarily love it.

16 oz can. Aroma is piney, bready, grapefruit, chalky candy, kiwi. Pours hazy golden with a one finger bleach white head falls into a ring after a minute. Taste has a moderate pithy bitterness with piney, citrusy flavors.

750mL with code 06 4 23B on the neck, drunk 3/5/26.
A good mix of various funky acids in the nose, with Brett leading the charge. Get a pinch of acetic, small amount of lactic and a very robust, fruity Brett character with soft lime, cherry, and mild funk. It transitions to a cleaner Sacch. character redolent of saison, adding apple and pepper, on the finish. Rustic grain and lingering lively fruitiness. Quite lively and very aromatic with a great clarity.
Citrusy and earthy with spicy phenols and still that touch of acetic to go along with a light oakiness. Brett not quite as prominent in the flavor, leaving more room for the saison yeast. Very vibrant mouthfeel with tight, natural carbonation and a nicely malty, well-attenuated texture. Maybe a shade more acidic than I'd prefer my saisons to be, even the barrel-aged ones, though it's hardly a huge issue. Pretty interesting mix of cultures and the oak and Sacch. really stand out in the flavor, while the Brett is a knockout in the nose. Seems like this could easily go another ten years to develop a ton of complexity. Still tastes too young, so it certainly needs at least another year or two.
