Description
It all began with a 27 year old brewer, a windowless apartment, and a mountain of credit card debt. Phillips’ first brews were about as unconventional as his financing structure. In the conservative beer climate of 2001 the brewery launched with an Espresso Stout, a Raspberry Wheat Ale, and a boldy-hopped IPA; a suitable foreshadow for the creativity to come.

Since then Phillips has moved out of the apartment and into a more brewing-appropriate facility (with windows) closer to town. We have launched a soda company, a distillery, and most recently a malting facility–the only one of its kind in Canada.

A dark porter with a thick big bubbled moka head, receeding quickly. A nice moka chocolate aroma with notes of vanilla. In mouth, loads of chocolate, like Nestle Quick, sustained. Overall, a bit thinner than expected. Bieropholie Import.

bottle. Red brown, creamy brown head. Milk chokolaty aroma. Burned coffee, light sugary body, fizzy. Chocolate retrnasal.

Bottle. Red orange, low off-white head. Light caramelized nut aroma. Flavor is unfortunately not particulary clean - dead yeast, minerallic, rubberlike and carbonized notes. Slightly chewy but ultimately too light body for a Doppelbock, light sparkly mouthfeel. Burned retronasal.

Although I do not like hazelnut, as always I try to be objective in my ratings!! Coke color, large long long lasting beige head, great lacing. Earthy musty sweet nose. Smooth sweet malt, hazelnut is quite prominent.Earthy finish. A solid effort

Bottle: Poured a deep black color stout with a nice dark brown foamy head with some good retention and some nice lacing notes. Aroma of deep black chocolate notes with some dry roasted malt notes as well. Notes of light coffee were also discernable. Body was about average with some good carbonation. Well done and well balance overall.

Bottle: Poured a deep black color ale with a huge foamy head with some great retention and some lacing. Aroma of medium bitter roasted malt mix with some dry bitter hops. Taste also consists of roasted malt with some bitter dry hops which is not the most interesting combination IMO. Body is about average with some great carbonation. Interesting but not necessarily something I would go for regularly.

Bomber from Brewery Creek
Orangey-beige colour, a bit dull, with a sparse head. I basically had to re-write my rating after it started to warm up. Initially, the aroma was all rotting pumpkin, but the taste was nicely balanced. But I’ll say this definitively - LET THIS BEER WARM UP BEFORE YOU DRINK IT!

The unpleasant notes in the aroma blow off with warmth and the beer emerges with a fine balance between malt, pumpkin and cinnamon. On the palate, there is a bit of a thick creaminess to the body when cold that thins out with warmth. This allows the impeccable sense of balance to show through just that little bit more. The pumpkin takes the lead, balanced with nutmeg and cinnamon, and rounded off by sweet, slightly doughy pale malts like a Portuguese roll. The finish gets a little flat on the palate, but that’s a minor quibble in the overall context of the beer. One of the better pumpkin ales I’ve had.

Brown bottle, 355 ml, via Importations Privées Bièropholie, savoured on October 15 2007; eye: voluminous white head: 7 fingers of head for 2 fingers of beer, head looks like melting ice cream when it diminishes, golden, slightly hazy, light effervescence, lots of lacing; nose: nice fresh hops, grapefruit, light malt, light caramel, orange zest; mouth: astringency, hops, light acridness, malt supports nicely the hops, pine, a bit of pepper, a bit of orange, finale in dry bitterness with a hint of pine, mild astringency, mildly bitter, slightly sweet, medium body, slightly harsh texture, average carbonation; overall: nice surprise FRANÇAIS Bouteille brune, 355 ml, via Importations Privées Bièropholie, savourée le 15 octobre 2007; œil : mousse blanche abondante : 7 doigts de mousse pour 2 doigts de bière, mousse ressemble à de la crème glacée fondante lorsqu’elle diminue, dorée, très légèrement voilée, légère effervescence, beaucoup de dentelle; nez : beau houblon frais, pamplemousse, léger malt, léger caramel, zeste d’orange; bouche : astringence, houblon, légère âcreté, malt supporte bien le houblon, pin, un peu de poivre, un peu d’orange, finale en amertume sèche avec une pointe de pin, astringence moyenne, moyennement amère, très légèrement sucrée, corps moyen, texture légèrement rugueuse, carbonatation moyenne; en résumé : belle surprise

Bottle: Poured a deep dirty amber and hazy ale with a nice foamy head with some great retention and some good lacing. Aroma of bitter hops is dominating with some subtle notes of resin hops. Taste is also dominated by some bitter hops with some light resin notes. Malt presence is a bit weak for the style and some citrus notes would have been appreciated. Interesting and probably one the first bottled IIPA coming from Canada but slightly below average for the style.

Copper color, fluffy beige head. Slightly spicy citrus hop nose. Flavor has none of the citrus, but bittering hops, long finish. Needs more malt sweetness for balance a bitter should display
