Description
It all began with a 27 year old brewer, a windowless apartment, and a mountain of credit card debt. Phillips’ first brews were about as unconventional as his financing structure. In the conservative beer climate of 2001 the brewery launched with an Espresso Stout, a Raspberry Wheat Ale, and a boldy-hopped IPA; a suitable foreshadow for the creativity to come.

Since then Phillips has moved out of the apartment and into a more brewing-appropriate facility (with windows) closer to town. We have launched a soda company, a distillery, and most recently a malting facility–the only one of its kind in Canada.

Pours a really, really dark brown colour with a tiny head. Looks pretty much like a flat coke, but not in a really bad way. Nice roasted smell to it. Tastes like breakfast with a little bit of alcohol to boot. Not sweet like some oatmeal stouts that I have tried, rather it is more on the side of coffee. It was more watery than what I expected as well.

This beer, it is dark and all. But head there is not, Smells like Count Chocula and dark chocolate. So not too bad if you know what I mean, which you very well might not. But who cares... eh. It tastes like dark chocolate. It tastes a little like coffee as well (I mean I was gonna say espresso, but who really knows what espresso tastes like... that’s right, nobody actually does... what objective method do we have to measure espresso taste... afterall some espresso tastes worse than a morman coffee.) Wow that was a rant. The beer itself is pretty light bodied actually. Good stuff. Quite drinkable. Would do it again. Eh up!

Dark brown color, with a light brown head. Brown sugar, burnt raisins, cherries and apricots in the nose. Malty body, cherries, chocolate truffles, oranges, brandy, strawberries exudes from the mouth. Dangerously drinkable and smooth. Chocolate strawberry finish. Yumm.

Very dark brown. No real head. Aroma of milk chocolate, plum and a little toast. As it warms the esters gain raisiny depth and alcohol starts to show. Flavour is fairly sweet with a hint of dark malt bitterness. The alcohol comes through quite a bit at the end...and in the absense of any other strong statements becomes kind of dominant. Overall, the malts are dull, muted with a leaning towards milk chocolate. There’s a few interesting elements and that gives me hope that with some refinements and experience this will emerge as a go-to winter brew. Today, though, it has no sense of purpose...no cohesion...and if a BW is going to lack that it better be a lot ballsier than this. Remaining bottles will hit the cellar I should think - the sherry notes this will gain should improve the beer in the same way they do for Hermannator.

A dark amber lager with a thin off white head. A rather buttery malt, lots of butterscotch, cloying. In mouth, a lightly sweet caramel malt with some nice peaty notes, woody, but also some boiled corn. Medium bodied. If it wasn’t for the diacetyl and corn, this would be comparable to the Trois Mousquetaires Okto. Thanks Capflu.
