Phillips Brewing and Malting Co.

Microbrewery in Victoria, British Columbia, Canada 🇨🇦

Description
It all began with a 27 year old brewer, a windowless apartment, and a mountain of credit card debt. Phillips’ first brews were about as unconventional as his financing structure. In the conservative beer climate of 2001 the brewery launched with an Espresso Stout, a Raspberry Wheat Ale, and a boldy-hopped IPA; a suitable foreshadow for the creativity to come.

Since then Phillips has moved out of the apartment and into a more brewing-appropriate facility (with windows) closer to town. We have launched a soda company, a distillery, and most recently a malting facility–the only one of its kind in Canada.

This porter poured a black colour with a thick brown creamy head. To the nose there was coffee, cocoa, roasted malts and a nutty scent. First taste was smooth and creamy with immediate cocoa flavour. Slightly watery mouthfeel but with lingering coffee / roasted malt flavour. Very smooth and flavourful. Palate was roasted coffee flavour that lasted...

Dull amber colour of a Red Truck Ale with a thick head that lasts long, like a Dix IPA. The nose is earthy and foresty hops like you find in the Two Lions Pale from Taylor’s Crossing, but with the breadcrusty malts reminiscent of Dix Vienna Lager. The body is a bit thin and barely carries across an earthy hop bitterness not dissimilar to that of High Mountain’s Big Wolf ESB. Again, malts are breadcrusty, with a caramel accent. The finish is dry and hoppy like a dry-hopped cask of Yippie IPA. It lacks sugar, definitely, but there’s a time & place to be sweet, and a time & place to be bitter. Unlike some of Matt’s previous efforts, this is no fiasco.

Thanks to JoeMcphee for sharing - clear amber beer with low carbonation - aroma of hazelnut, dough, cherries - zero carbonation in the mouth - sweet and acidic in equal measure - some nuttiness but not much else - some artificial-tasting sweetness in the finish - a little lifeless, but mildly tasty.

Thank you to JoeMcphee for providing this at his house for CaptainCougar come to NY gathering. Keep bringing the Canadian beers Joe. Pours dead with no head, a dark dark ruby-red amber beer. Aroma is not really strong but what is there is malt driven with light sherry-alcohol. Some burnt chocolate as well. But overall relatively cheap impression. There is a lot of sweet candy in there. Similar flavor with an overall old and dead feel to it. It’s a light body with barely any carbonation.

Bottle courtesy of Irondjin: Poured an orangey color ale with a super big foamy head with perfect retention. Aroma of bitter hops with strong sour notes. I am guessing we have an infection issue here which may explain why the head is still perfectly in place ten minutes after I have poured the beer. The label mention that these beers were heavily hops to make all the way to India without going down the drain – well seems like this one didn’t make it across the country without getting infected. The brewery is usually reliable so I will have to rerate when I get the chance.

Hazy copper, small beige head. Light fruity nose, faintly citrus.Cookie dough malt flavor, no hops. This is supposed to be a bitter/pale ? Nothing bad here, but nothing good either.

Bright reddish-brown colour...looks nice. Sort of a light aroma with vague caramel, molasses and spent grains. Thin, hollow and gutless nuts/caramel taste. Sweet, bland and poorly executed. Malt flavours are too thin and simplistic. This yeast is useless. Gets worse as the glass goes, too.
