Dunham brewery was founded on June 1st 2011. Our portfolio reflect our passion for this fine nectar. Inspired by classics European brewery traditions, our expertise is firmly oriented towards exploration and renewal of kinds. Our approach is clearly in the American modern wave which shakes the foundations of North American brewery since a quarter of century. Through our outstanding menu, we wish to tickles your taste buds and switch on your senses.

Whisky dominant et trop puissant, céréales grillées rappelant le pain Pumpernickel ainsi qu’un tout léger fruité composent la palette olfactive.
Un liquide ambré cuivré parfaitement limpide.
Une mousse rocailleuse et assez importante.
En bouche, les accents de Whisky sont encore une fois beaucoup trop importants.
On arrive à peine à distinguer les autres ingrédients.
Accents maltés de céréales grillées complètement enterrés par l’alcool.
Ça ressemble plutôt à un Whisky à la bière.
Grosse déception !

Dark brown. A bit of chocolate, some toastiness, a little bit of nuttiness. It's not bad, the barley wine lends complexity, the stout is a bit mild, some brown sugars. Decent stuff; not the peak of the style.

473mL can, pours black with a small tan head. Aroma brings out lots of brown sugar, molasses, some bourbon, vanilla, and a touch of oak. Flavour has plenty of molasses, fermented out brown sugar, oak, a little bourbon, vanillin, and booze. Reasonably integrated, decent barrel expression, but not particularly complex. But it does come together well. Very good.

473mL can. Pours very dark brown with a small beige head. Bready malts, gentle roast, and some dry grassy hops on the nose. Flavour has roasted malts, bitter hops, some dry grass, molasses, dark sugars, and a nice, dry bourbon barrel character, some char. Nice barrel character, incorporated well with the base. Very nice.

Bottled 750ml. -from the brewery shop. Darker ruby red coloured, minimal off-white head, tartish fruity nose. Tartish, spicy, fruity, berries and light barrel with notes of grapes in the finish.

On tap at the brewery taproom. Black coloured, medium sized pale beige head, roasty and light coffee in the nose. Roasted malt, chocolate, coffee, light ground coffee and mild roasty finish.

On tap at the brewery taproom. Unclear golden coloured, medium sized off-white head, herbal nose with whiff of earl grey. Sweet malty, herbal, light notes of earl grey with bitterish sweetish finish. Rather boring.

On tap at the brewery taproom. Hazy yellow coloured, medium sized white head, spicy herbal nose. Floral, herbal, light ginger and mild tropical fruits with floral finish. Touch of basil and mild mint also.

On tap at the brewery taproom as Simcoe Mosaic. Unclear yellow coloured, medium sized white head, citrusy and mild acidity in the nose. Acidic citrusy, herbal and bit grassy with bitterish finish. Not in best shape.

Can: Poured a hazy/cloudy pale yellow color ale with a large white foamy head with good retention and some lacing. Aroma of citrusy hoppy notes with some juicy floral hops undertones with some tropical hops notes and a semi-sweet finale. Taste is also a good mix of citrusy hoppy notes with some juicy floral hops undertones with some tropical notes and a semi-sweet finish. Body is full for style with a creamy feel with good carbonation. Enjoyable NEIPA with tropical hops but lacking some attenuation and juicy hops dominance.
