Grimm Artisanal Ales is a Brooklyn-based brewery founded in 2013 by Joe and Lauren Grimm after nearly a decade of tinkering with fermentation. Grimm specializes in concise, elegant ales epitomizing the creative, experimental spirit of the American artisanal beer revolution. With each limited edition release, we seek to push the boundaries of style and flavor in order to create beers with the utmost depth and complexity.
For five years, Grimm operated as a nomadic brewery. Joe and Lauren would develop each recipe in the kitchen of their Gowanus apartment and travel to existing breweries near and far to craft their commercial beers.

500mL bottle, pours jet black with a small tan head. Aroma is full of coconut-infused rum, toasted coconut, and dark sugars. Flavour is dominated by intense coconut, coconut-infused rum, intense bitterness that almost has a sourness to it. Great coconut and rum character, but the body doesn’t quite seem there, and that intensely bitter finish seems suboptimal. Good, but not great.

Poured from 500mL bottle (bottled 2024). Very dark brown with very minimal beige head. Mild toasted coconut underlay, coconut rum, oily, a touch boozy, medium body. Would like a bit more from the base. Okay.

500mL bottle. Pours very dark brown with no head. Loads of coconut white rum on the nose. Flavour has rum and coconut up front, a bit sludgy up front, kind of hollow on the palate after the initial impact. I don't love the rum character, comes across as cheap student rum, at least on the nose. I don't love this.

A tall boy can purchased from Half Time in New York state. I have a tulip glass ready to receive and so I do the pour. The appearance is a semi-hazy, yellow-gold liquid topped by a sparse but steady head of icy white foam. I smell citrus first and foremost, a bit of tropical and enough hops to register. The taste exceeds the scent considerably. Orange rind, grapefruit, white bread, a touch of toffee and cedar. A solid Imperial IPA, neither flashy nor disappointing.

Can: Poured a bright yellow with a white frothy lacing head. Aroma is hoppy and citrus. Taste is nice bitter hops forward and citrus fruity, light sugar balance.

Nose is bitter tropical fruit esters, subtle hop spice, pine nip, guava, grapefruit.
Taste comprises orange pith, mandarin, pine resin, lychee, grass, mango hint.
Medium bodied, fine carbonation, semi drying close spliced with juicy come lightly resinous hop bitterness.
Solid DIPA.

Aromas are malt, smoke, and a bit of toast. Flavors are somewhat similar to nose with smoke and toast coming out more along with some carbonic tang. Would be killer to cook with. A good smoke beer.

It pours a mostly clear pale gold with over a finger of foam. Excellent lacing and retention.
The smell is noble hops with some spice to them, toasted malt, floral.
The taste is the lovely noble hops, toasted malt, crisp spicy dry and very drinkable.
Medium bodied with medium carbonation, I would drink this again, no problem.
