330ml bottle, awaiting us in the fridge on arrival at our new apartment in Hazebrouck. Vibrant floral sweet mixed ferm aroma. Continues to taste, excellent wild expressions with bitter funk, sweet swirls and pleasant floral tangents. Very nicely done.

Bouteille 75cl partagée avec Stephane et Muriel.

Couleur blonde présentant un léger voile, col épais blanc tenace.
Arôme est frais par l'apport des houblons - léger parfum floral agrémenté par des notes plus rustiques au niveau des grains.
Palais présente une bière qui n'est pas sans rappeler la Blonde de chez Thiriez. Bière axée sur une inspiration franco-belge, vu que Thiriez est proche de la frontière. De fait, le tout passe comme une bière de chez Dupont.
Bonne tenue en bouche - il y a bien de la céréale - pils et pâle, rehaussé par une fine amertume des houblons nobles - ici oscillant entre terreux et léger floral.

Pours dark golden with the slightest orange hints, quite hazy. Medium to big sized, slightly frothy white head; shows good enough retention and some lacing. A quite brilliant, vivid aroma: very light malty base (crackery, hay), a quite strong grassy, borderline resinous, feel, some earthiness, strong fruitiness (peach, pear most noticeable), minimal spiciness. Overall more or less what you'd expect in a saison nose, with more fruitiness than usual. Taste notes follow the aroma. There's good flavour intensity but the beer is quite confused/messy, with earthiness getting a bit too strong; feels slightly unclean. Medium sweetness, medium to high bitterness, a balanced mouth and a bitter edge in a semi-dry, earthy finish and aftertaste. Overall ok, could be better.

330mL bottle, undated, drunk 7/21/24. Clear, medium-amber. Small, off-white head, quickly to ring. Delicate pepper, indeed. Almost a juicy richness to the pepper. Like a spicy, liquid concentrate. Very well-expressed and not overdone or astringent. Mineral, some plaster and light saison-like notes. Not heavy on the specialty malts, despite the color. Clean. No unwanted ester/phenol. Oh yeah...more of a bready, yet fruity and rich malty character with thorough pepper spice and intense pepper flavor throughout. Again, I get juicy, fruity notes with delicate pepper throughout. Clean, no unwanted phenol. Rich malt but amply attenuated. Hard to be unbiased here, since black pepper is one of my top 3 favorite edible substances, but this is just stunning and so well-balanced while pushing the envelope on spice without being too novel/overbearing.

Pretty clear amber beer, small creamy light beige head, a little stable, non adhesive. Aroma: oxidized, malty, dried fruits, raisins, some apple pie, caramel, a hint of cardboard. MF: ok carbon, medium body. Taste: oooh nice, lots of caramel malts, some alcohol, a bit nutty, sligthly sourish. Aftertaste: very malty, cardboard, oxidized, caramel, nice malty backbone, gentle bitterness.
