At the source: pours murky brown with almost no head. Smells like and tastes like herbs and veggies. Not very sweet. Plenty of flavors you do not expect in beer, but my ask why they are there.

At the source : pours a copper. Not very bretty in aroma or taste. It is, however, a pretty nice pale ale with a good bit of bitterness. Good.

Cask gravity @ GBBF 2016. Pours a hazy yellow color with a small white head. Has a fruity malty spicy piney spruce aroma. Fruity spicy weak piney spruce flavor. Has a fruity spicy spruce finish.

Draught at the brewery, 10/21/16.
Dark golden-copper with a light haziness.
As with their other barrel aged products, the barrel character is nice and mellow. Dry appleskin, pepper, honey-vanilla and light bourbon notes are all well-homogenized. Seems to be a good amount of tannin as the finish is short and a little dull. No alcohol or flaw.
Light soft to slick texture indeed shows plentiful wood tannin. Semi sweet apple character is well attenuated and provides moderate acidity as light oak character, vanilla and spice linger on the finish. Mild for what youd expect from the name. Nice.

Draught at the brewery, 10/21/16.
Lightly hazy, copper-tinged golden body is topped by a fleeting white head.
Medium-sweet apples in the nose also belie spice character from the fermentation; light clove and white pepper. Light tannin, with lots of fruity esters and bright apple notes. Fresh yeast, light earthiness and bright acidity lingering with no alcohol or flaw, nor seaweed noted in the aroma.
Lightly dry character, though with enough residual sugar to soften the palate. White pepper, light tannin and moderate acidity with vanilla, apple and finally, with warming, a touch of salinity that I assume is the seaweed. It’s barley noticeable and you’d never get it if you weren’t looking for it (I’m not even positive I tasted it). But anyways, a fun novelty and the base cider is delicious.

Dark mahogany with light cola tints and a medium-small, dark beige head showing moderate to low retention. Good clarity.
Light pumpkin character seems quite authentic, not just a bunch of pumpkin pie spices. There’s a very strong caramel-chocolate character that has earthiness, light acidity and a touch of sugar. Contrasted nicely with the light barrel aging which provides spice, liquor and just a hint of toastiness. They didn’t list the abvs of their gruits, but I assume this one to be somewhere around 7 or 8. You can’t tell, and it’s quite clean, with only light licorice and sage-like herb/spice notes adding complexity.
Nice and dry in the mouth but with a chewy, treacle-like character that must be the herbs/spices mixing with the malts. Light chocolate, bourbon-like notes and a bit of toasted oak with a moderate pumpkin flavor and vanilla and caramel sitting on the finish, softly. Great balance and good flavors without being overdone on barrel, pumpkin or spice. Lovely.

Draught at the brewery, 10/21/16.
Dark amber-mahogany body shows good clarity and a small, beige head atop with modest retention.
Heathery notes are immediately apparent, though not dominant. Mint, licorice and rosemary are mixed in as well, but integrated quite nicely with the caramel-honey-like maltiness. Good acidity, it seems, as it dries out on the finish. No alcohol or flaw.
Soft, lightly malty texture with moderate bitterness and tons of spicy herbal character. Ends with lots of rosemary-sage-like acidity/bitterness but the malts are present the whole way through, as well. Light carbonation and very drinkable. Good balance and not overdone on the spice/herb additions.

Draught at the brewery, 10/21/16.
Dark mahogany, with moderate clarity and a beige head atop that shows moderate retention.
Very light on the herbs/spices (this is an unhopped gruit with saison yeast), only a bit of soft sage and pepper character, with light roast notes easily giving way to base malt honey-caramel. Very nice acidity, which seems to be the highlight of the beer. It’s not mixed ferm-like yeast/bacteria character (this isn’t a sour/tart saison) but rather acidity mostly from the herbs/spices, I assume, with some from the dark malt and Belgian yeast, as well. Very even, balanced, easygoing beer with great minerality/plaster-like character and no clove/bubblegum/banana/peach. No alcohol or flaw.
In the mouth it’s surprisingly drinkable. Most black saisons go overboard on the specialty malts, making it heavily bready, grainy and roasty. Not so here, as the base malts do most of the work, adding a soft texture and pleasant honey-vanilla sweetness. Light roast and chocolate sits on the end with easygoing spice/herb additions creating earthy, spicy, herbal notes and moderate acidity. Tight carbonation and no alcohol or flaw. Very nice stuff. Who needs hops...
