Description
The Wild Beer Co was born in 2012 out of a love of fermentation, barrel-ageing and most importantly, flavour. We believe exceptional brewing stems from imagination and passion. Our beers are brewed using modern creative techniques and ingredients while producing some of the world’s oldest beer styles guaranteed to give you a memorable drinking experience.

Curious bought Wild Beer Co out of administration in a deal that involved the beer brands and intellectual property of Wild Beer Co, but not its Somerset-based brewery production facilities. The Curious and Wild Beer Co businesses were transfered into the hands of St Peter’s in 2023.

Hazy golden pour, with a huge rocky, frothy white head. General fruity aroma, with a sharp, green, acidic hop aroma. The apple juice doesnt seem to show up much, but threre is a nice papperiness, and clean crisp hoppy finish. The wild yeast adds hinds of tartness but no funk like i was hoping for. Its a strong saison with some nice white wine acidic qualities from the nz hops.

cask days 2013.
dark red, off white, slightly pinkish head. Great sour cherry, funky, tart, sour aroma. Some light vinegar also. The flavor is a tad bit disapointing. the sourness drops off, and its just a little tart.Very easy drinking thought. not a smack you over the top of the head sour ale. well done.

Bottle from a Beer Merchants Mystery Box. What a whale! It pours oily orangey - amber with minimal head. The aroma is bitter - sweet, fragrant, herbal, salted cracker, liquorice/aniseed, vanilla, toffee, salted caramel, big bourbon character, bourbon soaked oak and a twist of citrus. The taste is crisp, firmly dry, snappy, prickly, tangy citrus, bright yuzu vibes, oily, vanilla, ginger & lemon tea, lime, boozey warmth, milky sake, aniseed, old fashioned, whiskey sour, herbal, spicy, salted cracker and gummy candy with a warming finale. Medium body, limited carbonation and oily mouth feel. Super interesting stuff. Good depth of flavour. Bonkers.

Vintage bottle from the Beer Merchants Mystery Box. It pours ever so slightly hazy golden - pale orange with a fluffy white head. The aroma is musty, funky, brett, bright fruits, apricot, peach, gooseberry, plum, sppr plooms, white wine, hay and damp oak. The taste is firmly dry, dry oak, tannin, leather, white grape, gooseberry, sour melon, vinous, hint of acidity, deep funky brett, leather, some sherbet, sour candy, zingy, lemon-lime and limited alcohol presence. Medium body and moderate, fluffy carbonation. Has aged well. Interesting and quaffable.

Simple but tasty aroma of mostly cucumber, some gherkin, lactose and creamy notes. Flavour is medium sour. This delivers the goods. Quite refreshing, would love to drink this again on a hot summer day.

Aroma of tropical fruits, grass, floral notes, subtle funk, light resin, fresh hops. Flavour is medium bitter. Killer Brett IPA. However, I’m guessing my sample was on the fresh side rather than aged. I would love to find out how this ’evolves’.

Can at home. Aroma of grass, lemon, citrus, tropical fruit notes, cactus, hops. Flavour is medium bitter. Body is medium. Very crisp and sharply grassy, not your typical APA aroma, but definitely refreshing and tasty.
