Description
Artisanally brewed in Amsterdam since 2011.

Combining influences from the rich European beer culture with a non-conformist attitude.

From a family heritage of Swedish farm brewers and trained by the masters of ale and porter in England, we ended up in the Netherlands to create our own microcosm in the world of beer.

Inspired by the lesser known sides of European brewing culture and devoted to uncommon artisanal techniques, Butcher's Tears makes distinctive beers that progress beyond fashion and convention.

Bottle. Color: Very dark ruby to dark brown, dense light brown head. Very nice lacing. Aroma: Dark roasted malt, coffee, licorice hints. Taste: Dark and roasted malt, coffee, mocha. Some licorice and some funky hints too. Very smooth and dense mouthfeel. Floral hop background. Spicy hints. Funky wild yeast hints. Earthy. Light fruity and slightly sourish hints of coffee bean, blueberry and blackberry. Over moderate sweet going to moderate sweet at finish, moderate hopbitterness going to over moderate bitter at dry-ish finish. Once again a very nice and complex Butcher's Tears beer based on historical recipe. Great brewery.

Bottle. Bottled 1/20/2021, Pale Ale brewed with 100% whole cone Target single hop (instead of Endeavour) according to the label. Color: Pale golden, white head. Aroma: Malty and hoppy at the same time, some sage. Taste: Floral hop with a lightly caramel malt background. Notes of sage and citrus fruit, bit spicy and some hay. Starting moderate bitterness, going towards over medium at the long lasting very dry hoppy finish. Light sweetness. Just under medium body and just under average carbonation. Wow! Very nice Pale Ale from this great brewery. I want more!

Session IPA brewed with buckwheat, sampled at Dok Brewing Festival. Egg-white, medium thick, moussy, slowly opening head, clear and pure yellow golden robe. Aroma of wet cereals and wet white paper, straw, dried apple peel, multi-grain crackers, buckwheat flour indeed, dried bitter garden weeds (dandelion). Clean onset, green banana and some unripe pear, medium carbonation, slick body; cereally core with a grainy sourishness underneath indeed attributable to the buckwheat, slightly bready with hoppy notes of withering grass, straw and white pepper, ending with a somewhat astringent bitterness. This beer has little to do with what happened with IPA in general since the late seventies – this is more akin to a Belgian blonde, albeit a dry and hop bitter one; the buckwheat does shine through in a sourish-grainy way, but the whole feels a tad ‘empty’ and unbalanced. I am still waiting for the first Butcher’s Tears beer to truly impress me.

Bottle at home, light hazy yellow beer, small to no head. Aroma is herbal, medicinal, gale. Taste is the same, gale, bitter, low to no C02, watery, medicinal, weird, in the beginning quite nice but a bitter medicinal aftertaste is dont like.

Clear orange blond beer, small creamy yellowish head, stable, adhesive, leaving a nice lacing in the glass. Aroma: fruity, pretty yeasty, ripe banana, sweet impression, a bit smoky. MF: ok carbon, medium body. Taste: bitter, grassy, banana, sourish touch, a bit lemony, bitter, dry, spicy, herbal. Aftertaste: a bit watery, spicy, bitter, grassy, banana, a little dirty, fruity touch, malty, grains, banana peel, a little sweet, metallic touch, ok but not great.

Clear blond beer, practically no head. Aroma: nice, pretty fruity, a bit oxidized, rum, dried fruits, weird and funky. MF: soft carbon, medium body. Taste: pretty bitter from the start, malty, metallic touch, rather unpleasant. Aftertaste: malty, pretty bitter, unpleasant, some grains, a bit chemical, not good...

Clear pale blond to gold beer, big solid creamy white head, stable, adhesive, leaving a nice lacing in the glass. Aroma: very malty start, rural character, grains, hay, a bit spicy. MF: ok carbon, medium body. Taste: very malty, a bit sweet, grains, a little sourish, decent lager, good bitterness! Aftertaste: hint of banana, grains, hoppy, bitter, hay, cow fodder, rather chemical in the finish.
