Description
Hailing from Texas, Topher Boehm has an impressive resume - from Brasserie Thiriez to Jester King to his background in astrophysics - not to mention his unique house yeast. Cultivated from foraged wildflowers native to NSW, think wattle blossoms and banksia, blended with a Belgian saison strain, creating something truly individual which speaks of place. Topher even sprayed the entire brewery with inoculated wort when he moved in, just to make sure everything was literally covered in the house culture.

Goblet at Be Hoppy Madrid. Lightly hazy yellow with a huge cap of head that settled to a nice lace. Nose is well balanced, lemon juice, grapefruit rind, light grist. Some green hop. Flavor is well balanced. Grist and straw, lemon, some peppery notes. Yeast really shines. Very rustic. Medium bodied, light tartness. 8 7.5 7.5 8 8

Frothy white fair mostly diminishing head. Dark yellow colour. Light malty and hoppy acetic aroma. Light bitter acetic flavor. Average light bitter finsh. Oily palate.

Best from brewery I had. And I like Them normally. 75cl Shared by SirA. Pours hazy deep Golden orange with a White head. Massive funk, Wood , barnyard and lovely peach and apricot. Balanced - mild tartness and Dry finish. We quaffed it quickly. Dope. 4.3.

CBJ tasting. Thanks to Cloin for the bottle. A light haze on this paleish watermelon colour beer. Small pale apricot colour head. Smooth palate, semi dry, decent fine carbonation. Dry but pleasing grape must, a nice muscat sweetness. A touch of okay pink port. Light and semi dry finish. Dry but nicely grapey.

Nicely rounded, fairly acetic, some citric bite, low funk, sun-kissed pale wood. Tart finish. A little dried apple.

The nose shows intense notes of barnyard with hints of brett.
The palate is extremely carbonated and light bodied with moderate acetic edge. Moderately tart with moderate flavors of barnyard and light but noticeable savory notes of bacon.
