Description
Hailing from Texas, Topher Boehm has an impressive resume - from Brasserie Thiriez to Jester King to his background in astrophysics - not to mention his unique house yeast. Cultivated from foraged wildflowers native to NSW, think wattle blossoms and banksia, blended with a Belgian saison strain, creating something truly individual which speaks of place. Topher even sprayed the entire brewery with inoculated wort when he moved in, just to make sure everything was literally covered in the house culture.

A little cloudy dark red amber beer, small creamy white to off-white head, a little stable, non adhesive. Aroma: nice, pretty fruity, some dried fruits, raisins, sourish impression, a little funky, cheesy touch. MF: ok carbon, medium body. Taste: pretty sourish, a bit lemony, acidic touch, raisins, a bit oxidized, very fruity, nice! Aftertaste: some caramel, more acidic, lemony touch, a hint of vinegar, slightly bitter, acidic, hint of tannins, lemony, nice one!

(Draught at Craft Beer Co, Covent Garden, London, 18 Nov 2023) Pale golden colour with frothy, white head. Fruity nose with citrus, peaches, grass and a touch of wood. Fruity, tart taste with notes of lemon, grass, yeast, flowers and barnyard. Low bitterness. Light body, dry. On the thin side, but tasty and refreshing. Nice one.

(Draught at Craft Beer Co, Covent Garden, London, 18 Nov 2023) Reddish amber colour with frothy, off-white head. Fruity, sourish nose with notes of barnyard, tart berries, plums, wood and yeast. Fruity, tart taste with plums, citrus, barnyard, oak wood, yeast and a touch of vinegar. Low bitterness. Medium body, with a slight sweetness. Tart, fruity and quite complex. Very nice.

750 bottle shared while in Forbes. Cloudy brownish pale golden colour with a white head. Aroma and taste are fruity sour slight basement. And earthy rye. Medium body.

Fruity, tart taste with notes of citrus, grapefruit, vinegar, oak wood, white wine, herbs and a mild citric bitterness. Medium body, dry. Tart, woody and really tasty. Great beer!

Fruity, tart taste with grapes, green apples, oak wood, citrus, grapefruit, herbs, white bread, a touch of yeast and a mild herbal bitterness. Medium body, dry. Tart, woody and really tatsy. Very nice.

(Draught at Craft Beer Clerkenwell, London, 16 Nov 2023) Hazy golden colour with foamy, white head. Fruity nose with notes of citrus, yeast, oak wood and vinegar. Fruity, tart taste with oak wood, citrus, grapes, yeast, white wine and funky yeast. Low bitterness. Medium body, dry. Fresh and citric, with a yeasty tartness. Well balanced and moreish. Great beer.

(Draught at Craft Beer Clerkenwell, London, 16 Nov 2023. Blend #38) Brownish amber colour with brief, beige head. Fruity, sourish nose with oak wood, vinegar, caramel and grapes. Fruity, tart taste with notes of caramel, vinegar, oak wood and grapes. Medium body, dry. Tart and woody, moving in to Rodenbach territory. Very nice.

On tap at Mikkeller Brewpub London, pours a cloudy golden with a small white head. Aroma is complex and buggy, with wild yeast and oak. Flavour is complex, with lots of bugginess, oak, and gentle tart citrus. Buggy, oaky finish. Very nice.
