Description
Went bankrupt in 2024, but continued with change in ownership in 2025.

Bottle. Bit hazy light golden. Lots of quince, sour pear, light funk, vanilla, red apple, floral with hints of camomile. Medium sour, a bit less sweet. Over medium bodied. Pretty decent, but Basque style with quite fizzy carbonation. Not bad.

Bubbles gone in seconds; pale yellow, lightly veiled liquid. Sulphur, putteke , rhubarb, starfruit, and... a bit sour apples. CO² very present in the mouth, here more dried old apples, crabapples, ink, rather complex profile. Quite dry, CO² lending acidity - more than the apples; dry-out effect. This is one good cider. I cannot point to the PX influence - except then for the pretty complex character.

On tap at Arendsnest, pours a cloudy bright blonde with a tiny white head. Nose is just like a Spanish sidra, with lots of musty barnyard notes, horse blanket and crisp apple skins, with subdued bourbon in the background. Flavour is much the same, with bone dry apple skins, barnyard funk, horse blanket and a touch of faint bourbon. I wouldn't really have noticed the bourbon without knowing. This is impressively on point and superior to most Spanish sidras I've had. Excellent.
