Founded in 1988, Brasserie Fantôme has gained international attention and a cult following among lovers of craft beers. Owned and run by Dany Prignon, Fantôme is known for its unique variations on the Saison style of farmhouse ale, often involving the use of herbs, spices or fruit juice. Within the craft beer community, Fantome saisons are considered highly desirable and have developed a significant audience in the United States and United Kingdom. Ironically, while their complex, earthy, and herbal flavors have caused them to be sought out by connoisseurs outside of Belgium, Fantôme's products are difficult to find and not well known in the country of their origin.

Hazy orange-amber; fluffy yellowish head, shards of lace. Dark, roasted malts nose, citrus, spicey. (Sweet) chocolate - or do I smell this by suggestion? Bitterish to quite bitter, flowery, dry cacao powder, and, very markedly, sesame oil. Little sourish tang. Long, soft-bitter aftertaste, always coloured by the sesame flavour. Titillating MF, quite carbonated, medium bodied. Another spice-balanced marvel by Dany Prignon. Not my favourite, maybe, but impressive all the same. Cacao powder taste is unmistakable.

Hazy yellow color; big frothy head; turbolent perlage. Sour aroma, with a wood touch (because of the cork) and magnesia (because of the high carbonation). Quite dry, but with a correct body, and a light pleasant sourness.

Ruddy brown body with suspended sediment, medium off-white head. Flowery, toasty aroma with hard-to-discern spices. A bit fuller than other Fantomes I’ve sampled, fairly sweet and toasty and quite herbal with plenty of spices, flower petals, and a long herbal finish. Kind of like a peppery tea sweetened with dark candi sugar. Even with the heavier emphasis on malts, the classic Fantome herbal, spicy bouquet ends up dominating the beer. Something about this beer reminded me of cranberry sauce.

Looks like a Caffrey’s when it is poured, but the head just disappears - even though it almost blew a hole in my cealing when it opened itself. The aroma is yeasty and spicy. The flavor is of yeast and cinnamon - especially the cinnamon has been put in, in enormous amounts. This is too much for me.

Bottle Cloudy, orange body. Small, white head. Nose of camembert, fruits and some alcohol. Lightly acidic, lightly bitter flavour. (Alcohol-)Dry finish.

Bottle at the Belgian Beer Fest. Nutty. It was lightly sweet with a lower than usual yeast presence for a Fantome. Had a soft caramel meets walnuts and almonds sort of thing going on mixed with spices. It poured a dull brown with some light coppers and a touch of auburn perhaps. Little to no head. Flavor is pretty simple, light yeast, light choco/caramel malts with plenty of nuttiness and some toffee. Low bitterness though. Good medium body, low carbonation, chewy. What do you get if you cross a saison with wheat bread fried in butter and tossed in cinnamon and sugar? Something like this.

BBF Bottle. Pours a honey orange, with light brown notes and yellows. Pretty dark for a saison. Small head. Aroma of dry, musty hay, tons of soily hops and earthy, hemp, nutty dry parmasan cheese and light citrus notes on the end. You know this stuff’s gonna be good just smellin it. Flavor definitely delivers. It is about as powerful as the Pissenlit, tons of yeast, tons of character, but what it lacks is acidity and that’s a good thing. Nutty, dry, light barley notes with an easygoing sourness (or so I thought). Finishes more like a meal, with so many flavors, lots of grains and funk. Slightly reminiscent of Saison de Pipaix in its cheese and nut appeal and very earthy tones overall, but nowhere near the amount of cheese bacteria of Pipaix. Maybe a touch light in body and a touch of thinning on the end. Great stuff though.

Cloudy golden with high carbonation, creating a large, well-sustained, fizzy head - very strong aroma fills the room upon pouring, pungent, musty, cellared, hay, damp earth, slight fruits and a funkiness like mild, well-aged cheeses - taste is initially very sour, with lemon predominant, a touch of grapefruit - mild spices in the middle, with just a touch of hops to compliment them - sourness eventually subsides, making way for some grainy malts and an odd but enjoyable finish that tastes much like the mild cheese in the aroma - I never thought I would find anything cheese-like in a beer enjoyable, but, there you go - quite dry overall, champaign-like - another interesting offering from Fantome.

Draught - served very cold VERY hazy amber, with some greenish-ochre highlights; small but good stable yellow-amber head. Nose:???? A smell I associate with "Gelderse Rookworst" , a kind of smoked sausage I eat with young silver onions on vinegar. I’m sure there’s SOME (albeit little) acetic acid in this (Dany’s going to do an infarctus!). Indeed, quite sourish taste, metallic (like touching two metals with the tongue, releasing Galvanic current), spicey, yeasty. Finish is bitter, touch woody. Not very big-bodied. I’m surprised having tasted former Santé beers. I’ve been told by the people of HBL, commissioners of the beer, that the beer was much better at its release, and I believe them. Something went awry since.

2004 Printemps:
Hazy dark amber coloured body iwth a super large frothy/dense tan head. Aroma of 400 different things-yeast, coriander seed, hay, grass, lemon zest, caster sugar and even some metal. Medium-bodied; Astringent and effervescent mouthful. Strong ’barnyard’ flavours run rampant; Hay, wheat, coriander seed, yeast - all dominate. No sweetness to talk about. Aftertaste shows a prolonged bitterness with no respite and some english/german hops (low a.a.). Overall, a nice beer to try-not the best Fantome i’ve had, but a great find from Jim Dorsch in Vienna! I sampled this 75 cL bottle purchased at Whole Foods in Vienna, Virginia on 08-October-2004 on the Eastern Shore of Virginia with my good friend Jon[R888710].
