Founded in 1988, Brasserie Fantôme has gained international attention and a cult following among lovers of craft beers. Owned and run by Dany Prignon, Fantôme is known for its unique variations on the Saison style of farmhouse ale, often involving the use of herbs, spices or fruit juice. Within the craft beer community, Fantome saisons are considered highly desirable and have developed a significant audience in the United States and United Kingdom. Ironically, while their complex, earthy, and herbal flavors have caused them to be sought out by connoisseurs outside of Belgium, Fantôme's products are difficult to find and not well known in the country of their origin.

Murky orange-brown body, medium off-white head pouring from a corkless bottle (cheap bastards!). Rich cinnamon apple and toffee aroma. Surprisingly delicate flavor with caramel and toast mingling with cinnamon apples and orange peel. Toasty, bitter finish. Very balanced in the sweet/dry department. As it warms the beer becomes more delicate. Like most Fantomes, maddeningly promising but falls short of being great. Of course, there’s nothing wrong with settling for "merely good."

Hazy caramel colour with a nice tan head-reminiscent of apple cider. Aroma of spice, apples, sugar and floral hops. Medium-bodied; Spicey pepper flavour with some mushrooms and tons of other nuances. Overall, a great and complex beer that makes it hard for me to differentiate all the flavours, as usual from Fantome! I sampled this 75 cL bottle on 15-May-2004 at the May RB Party in Toronto, Onatrio.

Hazy orange coloured body with a thin white head. Aroma of hay, grass, tart apples and some other fruits. Light-bodied; Tart flavour that fades very fast, no prolonged sweetness. Apple flavour in the aftertaste, not so much else. Overall-nice, but not as flavourful as the other saisons. I brought and sampled this 75 cL bottle at the May RB Party in Toronto, Ontario purchased at Premier Gourmet in Buffalo, New York. This was sampled on 15-May-2004.

More or less a Flemish Sour without most of the "sour." Murky, opaque red-brown body topped by a nice tight tan head. Aroma gives the impression this beer’s going to be pretty sour, with notes of sour fruit, wood, and raspberry vinaigrette. The flavor is surprisingly non-sour, with plenty of wood (oak), hints of red wine, and fig mingling with classic musty, earthy yeasts. Spicing is evident as are flower petals and wisps of cigar smoke. Tight carbonation and great mouthfeel. Another good Fantome.

Bottled Large, light brown, mostly diminishing, creamy head. Good lace. Red-brown, murky body. Nose of pears, sirup, white port. Medium bodied. Soft carbonation. Moderately sweet, moderately bitter initial flavour. Moderately sweet, lightly bitter (long) finish. A pleasant beer.

Bottle - bottle conditioned Fizzy, white head, which disappears instantly. Yellow/white, cloudy body. Citric aroma. Heavily sour, lightly bitter initial flavour which faints out to a lightly sour finish. I thought I would never like a White Beer, but then I tasted this one.

Bottled. Cloudy orange. Light estery fruit aroma with a touch of menthe. Funky and lively, medium dry with light sparkling moutfeel. Lightly resiny finish with some bitterness. Complex.

Bottled. Cloudy copper colour. Interesting and complex aroma including cellary cherries. Sweet with light sparkling mouthfeel. Warming and spicy with notes of grapes and a grassy finish. A very interesting beer.

750mL bottle, Undated A very bright and coppery-orange pour, light reds and golds in there. Big foamy off-white head. Aroma of bitter orange, tons of funky yeast, hints of a fiery herbalness and some alcohol. Flavor is bold and spicy. The yeast explodes in your mouth, leaving a huge and complex funk swirling around, light cheese, grass, and generally reminds me of an extremely hot sunny day on a farm. The flavor never seems to quit though, and you get a good dose of alcohol, strong orange liqueur notes and what might be perceived as a lightly spicy vegetable-like juiciness. I loved this one. It was pretty aggressive, but I was definitely in the mood for something bold, and there was enough sweetness to balance (maybe a bit too much towards the end of the bottle), with interesting flavors and the always unique Fantome yeast. Would definitely buy again soon. This stuff would age magnificently. 2004 Draught at Redbones. Mmmm, yes, I do believe Fantome is quite tasty on draught. First the regular saison, now this. I love it, sweet but lightly sour as well, though not astringent. Powerful citrus and sugar with alcohol notes. All the while, the yeast imparts a complex flavor. Thick and juicy, like they squeezed fresh dandelion juice in to this stuff. A hearty saison!
2000 bottle compliments of Goldorak sampled on 11/6/05. In the nose are notes of madeira and strong Fantome yeast, with light caramel and sweet dark fruits. Flavor shows pleasant oxidation, with a strong herbal spiciness, light caramel that stays out of the way, but yet provides a supportive body. Light tanginess on the end and a definite B. Lambicus presence of sour cherries in the middle. Still poured a fine bubbled head, fairly well retained, overtop a dark olive and mahogany brown. Mouthfeel is still tightly carbonated, with light expansiveness.

An unclear dark orange beer with a fine orange head. The aroma is sour with notes of yeast and oranges. The flavor is dominated by yeast but also has notes of coriander.
