Description
Founded in 1988, Brasserie Fantôme has gained international attention and a cult following among lovers of craft beers. Owned and run by Dany Prignon, Fantôme is known for its unique variations on the Saison style of farmhouse ale, often involving the use of herbs, spices or fruit juice. Within the craft beer community, Fantome saisons are considered highly desirable and have developed a significant audience in the United States and United Kingdom. Ironically, while their complex, earthy, and herbal flavors have caused them to be sought out by connoisseurs outside of Belgium, Fantôme's products are difficult to find and not well known in the country of their origin.

(Draught - sampled as "Blanche de Soy") The colour, consistency and aspect of peach yoghurt. Slim rim of white head. Orange, citrus, coriander and some other herbs only Dany knows come out in the nose. Very classical witbier taste - surprisingly "cliché" for Dany. It’s OK, however. Very creamy mouthfeel (like drinking yeaststarter), slick, milky. Aftertaste is more fruity than the start. I never thought Dany would brew such a stereotypical beer - if one discounts its looks. No real Brit would drink this, unless offered a loaded gun alternative!

(Draught) Dark amber, fully cloudy; dense head, consistency and colour of coffee cream. VERY fruity nose, a little bit of cookies, faint spicey. Bitter-dandelion taste (obvious). There are quite some restsugars. Bitter is not oppressive, fresh-clean tasting, garden herbs and citrus in the finish. Medium to well bodied, creamy mouthfeel. Just a spur of alcohol, estery. The dandelion returns in force in the aftertaste. Wow - this beer has been spectacularily bettered in the +/-8 years since I last drunk this; creamier, less aggressive - that’s bettering performance!

Bottle - Brewtopia ’04 Cloudy, brown, chunky pour. Big floating yeast colonies. Earthy musty aroma. Sour, acidic flavor. One must develop a taste for this.

Cloudy amber. Slightly acidic aroma. Flavour is slightly dry, yeasty, with a little bit of fig note, and barnyard. Needed a little bit of whimsy to find the dandelions, but then I’m not a guinea pig so I don’t eat them very often. Decent beer, but certainly a simplistic effort by Fantome standards.

Murky chestnut colour. Aroma show smoke, brown sugar, plums, dates. Dry woody, funky flavours abound, with plum again, and slight toffee and a faint hint of acidity. It’s also quite yeasty. Despite all this, it failed to have the same life to it that many other Fantomes do. Tough to explain, but it lacked the intangible greatness that many of Dany’s other beers have.

Light amber colour. Cloudy. Aroma shows a little lactic acid, lemon, passion fruit and grapefruit. Very yeasty body. Slightly dry and bready. Where were those citrus notes I was promised? Not bad, but not Dany’s best.

There was quite a spectacle surrounding this bottle at brewtopia - the guy from specialty beer took the cap off and was about to get a corkscrew when he noticed the cork was slowly working its way out of the bottle on its own - a small group of us stared at it in anticipation - some salivating for the beer, others just gathered to witness the secret, explosive power of bottled yeast byproducts - "it’s gonna go," he said - the corked slid up seductively, like a stripper slowly rolling a stocking off of her leg - "it’s totally gonna go" - [insert tasteless sexual similies about "building up" and "exploding from the shaft of the bottle" here] - and sure enough, BOOM, the cork rocketed the approx. 60 feet to the ceiling of the auditorium, bouncing off of it and landing somewhere behind the lonely Saranac booth a few brewers down (I could almost hear the Saranac rep mutter "maybe if we made cool beer like that I wouldn’t have to sit here with my thumb up my ass all day") - oh, and yea, the beer was really good, too - in fact, this is quite possibly my favorite of the fest - naturally, the carbonation was immense, and the body was a dark ruby, wine-like color - lots of spice and must and wood in the aroma - exceptionally smooth and seductive, with a full, creamy mouthfeel (even with the high carbonation) - lots of berry, chocolate and caramel, with a touch of spices, but I didn’t really detect any sourness at all in this - it was really more sweet than tart - chocolate aspects linger in the finish an amazing length of time - this is by far the best non-trappist Belgian ale I’ve ever had.

Oude aantekeningen galore. Kleur was oranje/geel, troebelig. Veel fijn schuim met een blijvend laagje. Aroma's van bloemen, fruitig, zacht, ook een vleugje kurk, van de , eh, kurk. Smaak is lichtjes bitterig, kruidig. Medium body. Bitterheid neemt nog iets to in de afdronk, maar niet te. Deze versie was prima gelukt, geen makkelijk wegdrinkbier.

Mild barnyardy aroma, slight leather. Wheaty. Light and dry flavor. Cleaner and perhaps more boring than other Fantomes and many saisons, but still curious and unique.

A light effort from the mad brewer. Amber colour, dry, yeasty, peachy and sweetish. A good dose of hops for the style. Good, but to me it’s like one of the really good Fantomes with all the fun stuff taken out.
