Description
Founded in 1988, Brasserie Fantôme has gained international attention and a cult following among lovers of craft beers. Owned and run by Dany Prignon, Fantôme is known for its unique variations on the Saison style of farmhouse ale, often involving the use of herbs, spices or fruit juice. Within the craft beer community, Fantome saisons are considered highly desirable and have developed a significant audience in the United States and United Kingdom. Ironically, while their complex, earthy, and herbal flavors have caused them to be sought out by connoisseurs outside of Belgium, Fantôme's products are difficult to find and not well known in the country of their origin.

(draught)Orange-amber; white rim. Flowery nose, citrus-orange, hops and herbal. Taste with bog-myrtle, herbal, faint citrus as limequat; traces of maltsugars retronasal, as well as piney. A bit thinnish mouthfeel, really. More than OK, but it misses the Fantôme magic of their better bottles.

Dutch ratebeer meeting. Bottled, best before 2001. Red-brown, yeast particles. Aroma of chocolat malts, cherry. Taste is chocolat malty with a bit sour cherry. Alcohol notes are present. Complex, but not very well balanced.

Cloudy beige. Citrusy aroma with barnyard, peaches. Malty start gets spicy and spritzy as it goes. Finish is both refreshing and yeasty at the same time - a rare quality indeed. Like with all Fantomes, I need more.

Hazy orange colour with a dense white head. Aroma of curacao, coriander seed and caster sugar. Full-bodied; Sweet caster sugar in the flavour with some spicey complexities. Aftertaste nice and flavourful with sugars and spice. Odd for a summer-but really great to try! I had this bottle at the Winter Party at Oakes' place in Toronto, Canada on 05-December-2003. I owe a large amount of thanks to Joey_capps for bringing this 750 mL bottle up for us to all try!

Citrus, peaches and yeast for the nose. Cloudy orange creamy head for the eye. Fruit (oranges), a bit bubblegum and spice for the palate. Prickling dry mouthfeel, light to medium body, slightly bready aftertaste.

Dark brown with a touch of red - off-white head of large bubbles - high carbonation - musty aroma, with a mixture of dark fruit and earthiness - the flavor is hard ot explain - it's kind of like a brown ale mixed with a Saison - the dominant flavors are chocolate and nuts, with a hint of sourness and spice - light in body, but not thin - nutty finish - slight acidity - interesting - not something one expects when drinking a Saison, but a pleasant surprise none-the-less.

fruit, sugar, raisins and brandy aroma. Huge brown head, red brown. Spices, citrus, wood, earthy strawberries, some coffeeground sournes and bitternes. Citric, yet slightly metallic aftertaste. Relatively lightbodied. A quite unique brew.

(BSF 2003 version) Funky orange, "lijmend" (viscosus bact.), virtually no head. Lactic infection, cerials... like cornflakes-with-milk. Citrus and lactic acids in the taste. various spices, including very unusual ones. Fattic acids. Lactic components fill up the beer. 8% is much for a Saison - but they’re here. Not Dany’s best try. Problems with the yeast? This new rating is for the regular Fantôme. I can live with the style designation, but please note that the name "Saison" is NOWHERE on the label. Pale peach-yellow, huge, dense yellowish head. Very fresh spicey nose: laurel, thyme, bit soapy & piney. Sharp taste, ambrée malt, spices and (unripe) arichide (peanut). Flavour as the fibrous peel of peanuts and some mild-bitter anonymous herb. Warming up the arachide flavour becomes more haylike, grassy. Sharp, burning sensation. Medium bodied. Even this fresh bottle tastes weird to me. Not MY regular Fantôme. 8/10 Aroma, 4/5 Appearance, 6/10 Flavour, 3/5 ^Palate, 14/20 overall.

Hazy golden colour with orange tints...truly a great looking beer. Appley and peachy smell with a touch of skunkyness in the smell, but pretty good as well. Taste is very carbonated, medium-bodied with a slight fruityness. Also a hop dryness followed by a metallic ting. The palate is very drying, especially on the roof of the mouth. Alcohol is very noticeable as well. Overall, a great beer to taste, especially if you can find it! I split the 75 cL bottle with good friend JonR888710, which I purchased at Premier Gourmet in Buffalo, New York.

Cloudy brown with smallhead. Tart aroma, almost of sour cherries but not quite. Tart flavor, very dry, with a light almost bitter-chocolate background. Not very complex but well balanced for a strong ale. Not as nice as the summer beer.
