Undated 750mL bottle consumed on 11/25/2005. It has a cork in it, so it must be at least 2002 or older, not sure. Uncorking produces an immense pop, but no rush at all. Large light yellow tinged white head is moderately well-retained and laces lightly. Vigorous carbonation, and plenty of sediment. Color is a deep, baked hay and golden-copper yellow. Aroma of tart, distinctive, musty, lightly cidery AdR’s yeast. Lemons, honey, spices (coriander, white pepper), but really overpowering yeastiness. Bit of cork notes and a touch of woodiness from the yeast. Flavor is very tart, lightly to moderately acidic and fully yeasty. Touches of coriander-like spiciness, bits of strong clover and honey with a white pepper and lemon finish that is quite acidic. Body is medium with mostly pils-like honeyish malt, maybe a touch of sweet baked bread dough. Texture has tight carbonation, poigant and very appropriate for the tangy-tart yeast and spice flavors. Light grainy dryness on end shows the wheat/oats, but it is only in texture, there is very little creamy wheat or oaty flavor. Some of the dyrness in flavor could be (must be?) from the wheat, I suppose. No alcohol noted, lightly cidery and sharp. You really have to appreciate the AdR’s yeast to enjoy this one.

Bottle at Kulminator. Deep ruby/brown colour with thin tight tan head. Smack of bitter choc, some mustiness and dark fruits (damsons, dark plums etc). Bit like Rochefort 8. Quite good in mouth with softish feel and more complex fruit flavours. Very good indeed.

Amber colouring, a bit yeast floating around. Minerally honeyish aroma, some smoked or burned notes. Overall honeyish sweet and somewhat one-dimensional. Sticky mouthfeel.

[At RBSG 2005] A brown beer with a small light brown beer. The aroma is sweet woody combined with notes of alcohol, and caramel. The flavor is sweet spicy and woody combined with alcohol and hints of cork.

Bottled at Delirium, Gothenburg. Light copper and off-white in colour. Fruity, grapefruit, caramel aroma. A round, complex taste of sweet caramel and fruits, with hints of yeast as well. Bottle, 33cl. It pours a slightly unclear, brown body with the usual Abbaye des Rocs floaties and a small, off-white head. It has a lovely, fruity aroma with a good dash of sugar and prunes. Some Earl Grey tea blends in as well. A hint of alcohol can be detected, and there’s also some citrus released. Sweet, fruity and a little bit alcoholic and hop bitter on the palate. Full-bodied and nicely carbonated, smooth and rounded. The flavor has prunes, tea, sugar, a generic fruityness, bitterness, citrus hints and then even more sugar. All in a very nice and well integrated way. Lasting bitterness and sweetness in the end. Except for a very low head and all the chunks, this is a beer living very close to perfection. 110716

Thanks to Dorwart for the trade. Dark chestnut color with a thick beige head that lasts a long time, and sheets of lacing. Toasty aroma of malt and spice with some cherry. Rich body and very drinkable with sweet sugary malt flavors, as well as caramel, dried fruit and a bit of yeast. The finish is very sweet and lingering, yet has a nice hops element. The alcohol level complements the beer perfectly too. Thoroughly enjoyable brew.

An excellent and flawless beer. Aroma has dark fruit, toast, yeast, and malt. A dark red beer. Considerable carbonation, and an initially very large off white head that fads to a quarter inch on top of the beer and stays there until it is gone. Lots of sediment suspended in the beer. Complex flavor. Initially sweet syrup, then more aging fruit, the malt of a dubbel, and lightly bitter hops. There is a dry finish of light, bitter hops. Thick and very heavy. The last pour from the 750 had a much better appearance and was smoother on the palate. I would recommend trying to spread the sediment evenly before pouring.

A very nice tripel. Complex aroma and flavors. Aroma of powerful malt and yeast that is in the category of all of the best Abbey beers. Orange and very cloudy, with a thin foam that floats on top of the beer. Contrasting flavors, sweet malt, bitter hops, and salt. There is also fruit, and spices including coriander and wheat. Not as delicate as some, but better than most tripels.

11.12oz bottle consumed on 9/17/2005. Smells like a thick Belgian-yeasted pils at first. Bit of corn/vanilla and maybe a touch of bubblegum. Moderately sweet pils malt in the nose as well. Very hazy, ripened peach/apricot body with a huge, dense, off-white head. Very well-retained and lots of lacing. Light citrus (tangerines, light oranges) and peaches. Very yeasty with some white pepper and spicy fresh hops. Abb. des Rocs must have the best smelling beers in the world! Flavor begins with fruity, yeasty complexity, quite heavy on the yeast at first. Very soft, supple palate. Oranges, light caramel, peaches and just slightly bitter hops that linger on the finish. Yeasty, hoppy and malty all in good balance. Malt could stand to be a little bit more expressive to give a slight edge on the strong yeastiness; but it’s delicious none the less. Smooth and drinkable, very low carbonation. I’m surprised how hoppy it is, especially on the finish. More flavors on the palate include a bit of cake icing, touch of vanilla, pale grains and light yeast on the end. This brewery never ceases to amaze!

Medium creamy tan head over dark red-brown opaque body, with what appears to be yeast sediment at the bottom. Powerful aroma of sweet cinnamon and cloves with some fruitiness and sharpness. Lovely! Taste is powerful and quite sharp, consisting mostly of malts and the aroma, which grows more pronounced in the aftertaste. Excellent! A great brune! (0.33l bottle in Orval glass.)
