22oz bottle pours a hazy gold with some cloudy, white head. Nose has grass, pine, light herbs, lemon. Flavor has mild pepper, a little earthy, lemon, pine, mild candy. Medium bodied, bitter finish.

Bottle at the main DC December gathering. A Canadian beer that is full of hop flavor! Give me more please! Poured a golden yellow color with a white head. Lots of juicy citrus notes with a very nice juicy finish. Delicious.

From a bottle at the Ratebeer Dec 22 gathering 2015. Pours a clear gold with an off white head. Slighlty minty nose. Flavors of tropical fruit and citrus. Smooth slightly bitter finish.

Can courtesy of iphonephan, thanks! Cloudy golden yellow color, white head. Aroma of fresh tropical fruit. Taste is earthy fruit and citrus. Very tasty.

Bottle: Poured a pitch-black color stout with a medium size brown foamy head with OK retention. Aroma of roasted malt, black chocolate and boozy rum notes is interesting. Taste is a mix of light roasted malt with quite a bit of residual sugar notes with some boozy rum notes and some creamy black chocolate notes also perceptible. Body is full with nice oily texture and medium carbonation with some alcohol notes easily detectable. Not bad but rum is bit more dominant then I would have like it to be.

Le nez est dominé par l’alcool. Le rhum est en abondance. On sent bien des sous notes de raisins secs et de chêne, mais elles sont complètement dominées par la forte présence agressive de l’alcool. Le liquide est noir, opaque, développe une toute petite mousse qui fuit rapidement. En bouche, l’alcool est encore une fois très dominant. On sent un peu plus le boisé avec en finale des notes de torréfaction et de chocolat qui disparaissent lors des gorgées subséquentes à cause de la trop forte présence de l’alcool et du rhum. Assez déçu de cet opus du Castor. Si j’avais voulu boire du rhum, je m’en serais acheté une bouteille.

Biggest gusher ever (for a beer)!!! Sérieusement, on parle de toute une giclée ici. Beaucoup de matières en suspension ont terni le visuel. Autrement, cette bière est vraiment excellente. Le citron et une légère acidité sont en parfaite harmonie avec des houblons bien choisis et moyennement présents. J’avaiis une impression un peu salée en bouche, un peu comme une Gose.

Un houblonnage intense perce le nez avec beaucoup d’agrumes (pamplemousse et citron), de résine, et de très discrètes notes de torréfaction aux accents de café noir. Le liquide se présente noir mais clair avec des reflets rubis. Sa mousse beige est généreuse et persistante. L’entrée de bouche est tout en agrumes avec des notes de fruits tropicaux et de pamplemousse et une finale mi- terreuse mi- résineuse. Les notes de torréfaction sont discrètes mais font quand même ressortir un peu de café. Délicieuse. Plus IPA que black.

(On cask @ Moeder Lambic Fontainas, Nov 17 2015) Pours clear deep cooper brown with a large cream head lingering with lace. Aroma of rich fruitcake, burnt sugar, stewed raisins, Christmas spices, vanilla, rum, very light wood. On the palate, toast and toffee, sweetness balanced by bitterness of roast and spicebox. Rum spirit notes in the middle, vanilla, heat. A little wood. Finish is lightly sweet and lightly bitter with some alcohol heat. Lingering rum in the aftertaste. Light body for style with fairly high carb for cask. Good and pretty sweet, a touch boozy, but sort of thin when it should be rich on the palate to match the nose. Not great but decent for style. Fun to drink a Quebec cask in Brussels though.
