Description
Wilding Cider is made by Beccy & Sam Leach, of former restaurant fame with their wonderful Bristol restaurant Birch. We are orchard cider makers and farmers, based in Chew Magna, North Somerset. We grow mostly Somerset cider apple varieties in traditional orchards, managing them in a careful organic way.
After some years of hobby cider making we went full time in 2018 and scaled up production to 6,500 litres with fruit from our own 4.5 acre orchard and three other orchards around Somerset.
Fruit is picked from the ground in the old way, let mature and fully ripen before pressing, and then fermented gently and slowly with wild yeasts, no sulphites and plenty of time.
We mostly bottle cider in 75cl sparkling wine bottles and mature for at least a year before release.

750ml bottle from Fine Cider Co. Orangey gold colour, thin white rim and aroma of astringent funk, apple. Taste is sweet, apple, orchardy, leather, meaty funk, wood, with drying tannins. Medium bodied, light carbonation, drying medium tangy tannic finish. Nicely drinkable.

750ml bottle from Fine Cider Co. Hazed orange golden colour, white foam head that dissipates to a thin rim and aroma of apple, fleshy, fruit, citric, strawberry hints, funk. Taste is sweet, apple, fruity, juicy, kumquat, marmalade, with stewed strawberry notes, some balanced acidity and tannin. Medium bodied, low carbonation, drying tart & tannic finish. Nicely drinkable.

Taste is sweet & tart, tangy, apple, fruity, citrusy acidic, with hints of toffee, caramel, some woody & funky notes and drying tannin. Medium bodied, fine carbonation, medium dry tart & tannic finish. Nicely drinkable.

750ml bottle from Fine Cider Co. Wilding cider rating #50. Hazed orange colour, short-lived bubbly off-white head and aroma of apple, citric, strawberry hint, funk. Taste is sweet, apple, fruity, fleshy, tart, with zingy citric, ripe strawberry notes, some farmyard funky hints, acidity and tannin. Medium bodied, fine carbonation, medium drying tart & tannic finish. Very drinkable.

29/5/2024. Bottle shared by danlo, cheers Ed. Pours cloudy pale orange gold with a small white head. Aroma is fleshy apple, stone fruits, grassy, orange, funky edge. Moderate sweetness and tartness, medium bitterness and body. Low carbonation. Drying finish. Quite unusual, well done.

75cl bottle from Pullo, Exeter. Pours a hazed golden orange, gentle carbonation. Soft cheesy notes, natural apple fruit, distant orangey hints, subtle tannin. Nicely done.

Bottle pour at The London Cider House, pours a clear, bright, amber orange with a small white head. Aroma brings out gentle champagne-like effervescence, tannins, and red apple skins. Flavour has a bit of farty funk, dry tannins, and red apple core. Weird sulphuric thing I can't quite shake but it seems well-made.

Bottle pour at The London Cider House, pours a clear bright orange with a medium white head. Aroma is full of barnyard funk, some tannins, red apple skins, and caramel. Flavour is medium sweet, with plenty of caramel, tannins, red apple, and moderate funk. For a sweet cider, the depth and funk are impressive. Excellent.

On tap at The London Cider House, pours a clear bright golden with a small white head. Aroma brings out gentle caramel apple and some cjampagne-like effervescence. Flavour is medium sweet, with toffee, red apple skins, some tannins, and light champagne-like effervescence. The sweetness combines well with the funk and horse blanket character. Very good.

750ml bottle from Fine Cider Co. For #rgpm. Hazed yellow gold colour, no head and aroma of perry pear, fruit, funk hint. Taste is tangy, tart, fruity, floral, perry pear, fleshy, woody, with some acetic funk and drying tannin. Medium bodied, low carbonation, drying peary finish. Nicely drinkable.
